Blueberry Kiwi Power Energy Smoothie

Being gluten free and traveling is always an adventure, as I always wonder whether there will be anything healthy for me to eat when I arrive at my destination.  I was recently traveling to Norway, and was delighted to find the most delicious smoothie in the Oslo airport while waiting for my connecting flight – all of the whole ingredients were in a cup, and I took the cup to the counter and they blended it for me there. The main ingredients were almond milk, gluten-free oats, banana and kiwi. 

 

KIWI! 

 

I loved the unique taste of the kiwi in the smoothie so much that I had to recreate it at home – with a few additions – to keep the taste of my trip going.

 

This blueberry kiwi smoothie is great for cooling down on a hot summer day, is gluten-free, has no sugar added, and is packed with protein to give you long lasting energy, as well as a zing of vitamin C for upping your immunity while traveling (or when life gets hectic or stressful) courtesy of the kiwi.

 

 

This smoothie is:

 

GLUTEN-FREE

DAIRY-FREE

NO-SUGAR-ADDED

HEALTHY HEALTHY HEALTHY

RICH IN VITAMIN C

 

Blueberry Kiwi Power Energy Smoothie Recipe

 

Here’s how to make it:

 

1 banana

1 kiwi

Handful of blueberries

Handful of gluten-free oats

2 scoops chia seeds

1 TBSP almond butter

1 cup almond milk

Several ice cubes

 

(Quick tip:  chia can make smoothies very thick once the seeds start to expand.  Vary the amount of chia - or omit the chia completely - depending on how you like your smoothies!).

 

I threw everything into my Vitamix on high, and in a few seconds I had the most delicious smoothie, totally gluten-free, and full of antioxidants, vitamin C, and energy to help me get through the rest of my day.
